The name of "furou", a kind of cooked meat, is rarely known. Even Kangxi Dictionary only bears the pronunciation of "fu", no explanations. "Fu" is only an oral word used in generations of passing the craft. The craft of furouwas developed by Ma Jianyi, a private cook of Minister Li Hongzhang. Ma was also called Ma the Cook. Ma the Cook once cooked a feast to celebrate Queen Mother Cixi's birthday, and was greatly rewarded by Cixi, granting him the name "ZhouziJiang". Fu rou craft, currently, is inherited by Wang Chongren, son of Wang Yunbang, and Wang Chongren has started "Zifu Tang" upon his craft. The main procedures of the craftinclude light smoking, boiling, and "fu".Zifu Tang picks 12 to 18 months old, antibiotic free, and lively pigs, and no spices, food additives, or preservatives are involved in the cooking procedure. Attractive zhouzi (upper part of a leg of pork), fangrou (streaky pork), toupi (spare rib roast), and even chicken, beef, and mutton meet with people's demand for both taste and nourishment. With generations of people's passing on and the help of modern technologies, the appealing delicacy is here before our eyes.


䵁肉这个叫法鲜为人知,即便是在《康熙字典》上,也只是注明"䵁"字的读音,而对字意全无解释,所以"䵁肉"是在技艺传承中口口相传的叫法。䵁肉制作技艺,产生于清朝末年李鸿章的私厨马建义,外号马大勺。"马大勺"还曾受李鸿章之命,为慈禧做寿宴,受到过慈禧褒奖,故赐"肘子将"三个字。目前,䵁肉技艺由王云帮之子王崇人继承,并成立"子黻堂"。䵁肉制作工艺,以清淡熏煮䵁为主要方法,子黻堂·䵁肉的制作技术主要采用12-18个月的猪肉或者使用无抗生素跑猪肉为原料,不用香辛料,不用任何添加剂、防腐剂,色泽诱人的肘子,方肉,头皮,鸡,牛,羊肉等美味,能满足人们对美食和营养的需求。经过几代人的传承再加上现代科技的辅助,一道令人垂涎的美食展现在世人面前。091
