Shangri-La’s Chinese Culinary Masters Present Hairy Crab Delicacies With Seasonal Flavours And Cuisines From Different Regions

021It’s Hairy Crabs season again and this year, Chinese culinary masters from 42 Shangri-La hotels in 36 destinations across mainland China, Taiwan and Singapore have teamed up to present the annual Hairy Crab Festival. The festival will run from 11 October to 30 November 2018 and it will feature special versions of hairy crab dishes with seasonal flavours in different Chinese cuisines and styles – from Huaiyang to Cantonese, traditional to modern and fusion.
 

Together with food influencers (KOLs), Mr. SHEN Hongfei and Mr. Craig AU-YEUNG Ying Chai, nine of Shangri-La’s Chinese master chefs have created nine tantalising signature crab dishes (see appendix) featuring some of the most exquisite hairy crabs from primary crab farms, including Yangcheng Lake in Jiangsu and Panjin in Liaoning.

0292Steamed Conpoy and Egg Custard with Crab Meat is created by Shangri-La Hotel Tianjin’s Executive Chinese Chef Oliver Lai. The rich, smooth custard has a deep crab flavour and is elegantly served within egg shells topped with steamed conpoy.

0293Besides the nine signature dishes, special set lunch and dinner menus, wine-pairing events and gift sets are available for guests to celebrate the hairy crab season with family and friends. Superb dishes on the seasonal Hairy Crab Festival Menu at Shang Palace in Tianjin include Braised Tofu with Hairy Crab Roe, Boiled Hairy Crab and Rice Cake with Rice Wine, and Stir-fried Bamboo Sum and Asparagus with Hairy Crab Meat. Hairy crab dim sum delights are also featured, including Deep-fried Turnip Pastry with Hairy Crab Meat and Steamed Hairy Crab Meat Dumpling, and diners can enjoy the finest plump whole male and female hairy crabs.
