春茶飨宴1China World Summit Wing, Beijing Present Longjing Tea or Dragon Well Tea, as well as a collection of tea-inspired delicacies from 1 to 30 April 2019, in line with the launch of Shangri-La Group’s ‘Spring Tea at Shangri-La’ campaign across 48 Shangri La hotels in mainland China to celebrate the spring tea harvest season. The hotel has also prepared as election of exclusive spring tea gift items for guests to bring home a taste of spring.
 

Shangri-La Group specially sources its spring tea from the Longjing Tea plantation in the West Lake region in Hangzhou. Tea from this centre is famous for its colour and fragrance. It owes its fine qualities to the area’s unique weather and favourable environment as well as to the high selection standards and processing methods.

春茶飨宴2Three of the hotel’s outlets, The Red Chamber, Noodle Bar and The Lounge, also present a wide selection of culinary specialities inspired by the flavours of Chinese tea.
 

The Read Chamber has crafted a Longjing-themed menu featuring Deep-Fried Prawns with Green Tea and Cereal, Braised Pork Ball with Green Tea Sauce, Deep-Fried Chicken Gristle with Longjing Tea and Rice Cake Jelly with Longjing Tea.

龙井炒虾球Noodle Bar will offer Cold Noodles with Longjing Tea Soup.
 

The Lounge presents Longjing-inspired desserts, and the pastry chef has created surprising flavours by blending Green Tea with different elements like mint, red bean, orange blossom and chocolate.

Chinese green tea has a long history and is renowned for its greenish colour, pleasant aroma, gentle flavour and beautiful bud shape. The tea bushes are rich in nutrition and flavours from the past winter.
 

Before the Qingming Festival on 5 April, the first flush (known as Mingqian picking) begins at the end of March. Fresh tea leaves are brought back from the high terraces and immediately hand-stirred and dried by experienced tea roasters. Tea picked during Mingqian, particularly Longjing Tea, is considered premium and renowned for its great complexity and long-lasting flavour.
