Terrace Café at the Sheraton Hotel Tianjin just inaugurated an exotically delicious event, the Indian Food Festival.


Swadisht khana means tasty food in Hindi and the Sheraton didn’t do it for less.

With a wide range of typical Indian foods such as biryani or kabab, the renowned chef Hardip Bhatia and two other Indian chefs from Starwood group expressly came from India to present guests with nothing but authentic cuisine.

Chef Bhatia comes from Lucknow, capital of Uttar Pradesh. The city’s famous form of cuisine is known as Awadhi, captivating in taste and colours. Famous for being one of the country’s most ancient and regal forms of cooking, the beauty of Awadhi lies in the spices and flavours brought into play. Not so much about the burning in your mouth, but about a pleasant stimulation of your taste buds, Chef Bhatia explained the secrets of this superb cuisine. According to him, it’s all in the rich flavours and ingredients used. Saffron, cinnamon, cardamom, rose water and cashew nuts is just a few of what many have heard of, many have tasted, but only a few know how to master it into a perfect culinary combination.

The taste of a thousand different spices will give you the wrong idea. Although the food might seem heavily seasoned, the truth is that good chefs know better, and to create wonderful dishes like Tandoori Mushroom, Paneer Shahi Korma (cottage cheese in a cashew based sauce) or Murg Tikka Butter Masala (butter chicken), chef Bhatia knows exactly which spices are the best for certain vegetables and meats.

And worry not vegetarians, there’s also plenty of feasting for you. Even though Indian food is a great admirer of chicken and lamb, lentils, potatoes, basmati rice, vegetable kakabs and plenty more will get you off of your usual diet.


The very “popular secret” of Awadhi? Dum pukht cooking style, meaning the talent of cooking in a slow fire and let flavours blend to perfume a colourful table.
